- 6 large baking potatoes (about 5 pounds), peeled and cut into 1 inch cubes
- ½ cup Gaea Sitia Region extra-virgin olive oil
- 10 garlic cloves, peeled
- Salt and pepper
In a large saucepan, boil salted water. Add potatoes and garlic and cook until potatoes are tender when pierced with a fork, about 30 minutes.
Drain potatoes and garlic, reserving some cooking liquid. Mash potatoes and garlic. Add olive oil, mixing well. If potatoes are too thick, use reserved cooking liquid to bring to desired consistency.
Season and enjoy!
